**Solar Drying of Fruits** Solar drying of fruits is an efficient, eco-friendly, and cost-effective method of food preservation that uses natural solar energy to remove moisture from fresh fruits. By reducing the moisture content, solar drying inhibits the growth of microorganisms and enzymes that cause spoilage, thereby extending the shelf life of fruits without the need for chemical preservatives or electricity. In the solar drying process, fruits such as mango, banana, apple, papaya, pineapple, grapes, and berries are washed, sliced uniformly, and placed on food-grade drying trays inside a solar dryer. The solar dryer traps heat from sunlight and ensures controlled airflow, allowing moisture to escape while maintaining optimal drying temperatures. This results in hygienic, uniform, and faster drying compared to traditional open sun drying. Solar-dried fruits retain most of their natural color, flavor, aroma, and nutritional value, including vitamins, minerals, and antioxidants.
